The Nutella stuffed cookies are the ultimate gourmet cookies made with brown sugar, dark chocolate and most importantly molten Nutella! Even though these are gourmet cookies, they’re actually very simple to make at home with ingredients available easily at any nearby grocery store. The key to these cookies is the brown sugar and the chocolate which when baked gives a golden brown look.
These cookies are thick, soft and the best part is you can keep the Nutella frozen and the dough in the fridge so you can bake them anytime you went. They’re perfect for the moody, gloomy days you don’t feel like working at all and munching on stuff while Netflixing your time away!
The best time to have these Nutella stuffed cookies is soon after they’re out from the oven and hot. But they’ll taste equally good when cold!
1. How do you make cookies chewier?
To make the cookies chewy and gooey, mix the ingredients very well and instead of adding egg white, make do with egg yolks only for best results! TIP: Beat the egg yolks well before adding them to the mixture!
2. How to make Nutella cookies from scratch?
Follow the steps given below to bake the Nutella stuffed cookies from scratch! They’re extremely easy to bake and don’t require over-the-top ingredients.
- 275-300 grams of all-purpose flour (sieved)
- 175-200 grams brown sugar (sieved)
- 2-3 tbsp. of icing sugar/ powdered sugar (sieved)
- 1/4th baking soda
- ½ tsp. salt
- 100-110 grams of unsalted butter at room temperature
- 1 egg+ 1 egg yolk
- 1 tsp. vanilla extract
- 200 grams chopped dark chocolate compound/bars
STEP 1: – Scoop blobs of Nutella in a tray and freeze them for about an hour or 2.
Preheat your oven to 160°C Fan!
STEP 2: In a large bowl, beat the sugar and soft room temperature butter until the mixture is fluffy!
STEP 3: Add the eggs and vanilla extract to the mixture. You can also add the vanilla to the egg first, beat it with a spoon and add it to the butter and sugar mixture! This reduces the pungent smell of the eggs!
STEP 4: Fold in the baking soda, baking powder and 1/3rd of the flour.
STEP 5: Fold in the leftover flour and chopped chocolate chips. Knead the dough well for about 15 minutes.
STEP 6: Once these steps are completed, scoop out dollops of dough with an ice cream scooper. Flatten the cookies out and add the frozen blobs of Nutella in the middle and wrap them up well so that the Nutella doesn’t burn in the oven!
Once wrapped, line up the cookies in a tray with parchment paper. Keep a good distance between two cookies and a tray should have around 6 cookies in them.
Bake the cookies for about 12 minutes at 160° C and for 8 minutes at 180° C. Make sure the cookies are golden brown! The more you bake the cookies, the more molten and gooey the cookies are going to turn out!
