Vanilla sponge cake recipe

Dry Ingredients

  1. 1 cup all-purpose flour (sieved twice)
  2. 3 tbsp. icing sugar or powdered sugar (sieved twice)
  3. ½ tsp. baking powder
  4. ¼ tsp. baking soda

Wet Ingredients

  1. 200 ml. of condensed milk
  2. ½ tsp. vanilla essence
  3. 75-100 grams butter at room temperature
  4. ½ cup water

Yields: 2 Marble cakes. For 1 marble cake, use the ratio 3:2 for the chocolate and vanilla cake!

Method:

Step 1: In a large bowl mix the butter with the icing sugar at low speed until the mixture seems like an off white- white colour

Step 2: Add the cocoa powder to the mixture along with 1/3rd of the condensed milk. Keep mixing this.

Step 3: Fold in the flour in four parts along with the rest of the condensed milk and water. Don’t let the mixing stop!

Step 4: Finally add the baking soda, baking powder and vanilla essence to the mixture. Scrape the bowl from the bottom and give it one last mix!

Follow the same steps for the vanilla sponge cake mixture barring the cocoa powder in a separate large bowl!

Take a Bundt cake or doughnut shape mould and butter it really well so as to avoid the cake sticking to the mould. You can also use butter paper and spray it with oil! Once this is done, pour in the chocolate cake batter with a serving spoon while leaving gaps for the vanilla cake batter. After adding the chocolate sponge cake batter, add the vanilla cake batter in the gaps left. Repeat the same for the second layer. Finally, take a fork, knife or spoon and mix the batter in 7 clockwise and anti-clockwise directions for the marble effect.

Tap the mould on a flat surface to get rid of as many bubbles possible!

Bake it in the oven for about 35-40 minutes at 180° Celsius or 375° Fahrenheit.

After it’s baked, let it rest for about an hour. Finally, take a plate or a cake board and flip the cake! That’s it, that’s how you can bake an eggless marble cake at home!

You can also add toasted walnuts to the batter for a walnut marble cake! Enjoy this marble cake with tea or pack them in your snack box or your kid’s lunch box for school! Add some dark chocolate ganache on the cake and serve it to all the guests! Another great idea is to pack these cakes well and send them to your friends and neighbours during the holidays!
